It goes without saying that the way to a man’s heart is through his stomach and with Father’s Day nearing, we have the perfect recipe created by Food I Love You, to treat the number 1 man in your life!
Food I Love You is an experiential catering business that focuses on food experiences that are lived, detailed and authentic. They are based at Joburg’s new Art Precinct and Urban Farming Space, called Victoria Yards where they have a private dining studio which opens up as an occasional restaurant once a month on every first Sunday. “Our food style is unassuming, explorative, and inclusive”- says, Food i love you owner, Mpho Phalane.

Salmon Fishcakes with a minted dill yogurt
Ingredients:
500g Salmon or you can use salmon offcuts (ask your local offcuts)
6-7 Medium potatoes
Handful of Dill (chopped)
¼ cup of chopped gherkins
2 spoonful’s of chopped capers
1 heaped spoon of wholegrain mustard
Juice of 1 lemon
Salt & Pepper
2 large eggs
Panko crumbs
Minted Yogurt:
- Cupful of mint
- Half cup of dill
- 250ml of Greek plain yogurt
- Honey (2 spoons) or to your liking
- Salt and pepper
- Squeeze of lemon
Directions for salmon fishcakes:
- Peel & cut potatoes and boil
- Once cooked, mash potatoes and mix with all ingredients except the eggs and panko crumbs
- Heat Oil in a fryer or pan
- Shape your mix into 2-3cm thick burger patties
- Once shaped, in two separate bowls crack your 2 large eggs and in another put in your panko crumbs
- Gently lift your ‘patties’ and coat it in the egg then in the panko and fry till golden brown
- Serve and enjoy with our minted yogurt
Directions for minted yogurt
Combine all ingredients and blend together at high speed. Adjust your seasoning, and honey according to your liking!
